Guys, today was rough.
First of all- thanks to those of you who have followed me or take the time to read my journey. 😊
If I wasn’t doing this blog- today might’ve been the day to give up. But everyone just NEEDS to know what I eat every day, right? 😏
Just kidding- I’m happy I’m doing this for so many reasons. Here’s my day.
Here in upstate NY it was 60 degrees! Meanwhile, we have an ice storm advisory for tomorrow night. So odd.
With that, I made a nice bright breakfast to go with the sunshine. Egg white scramble with spinach, diced tomatoes, onions and topped with 1/4 of a PERFECT avocado 🥑.
Why is that always so exciting to open a perfect avocado?Add some Cholula to it- yum yum yum.

I was happy and soakin up the sun with my window down in my car (I know… it was only 60) when I realized I had a wicked headache. I had coffee so it wasn’t a caffeine headache, and I changed the station when Kesha came on so THAT wasn’t it…I think my body is missing SUGAR!
Man, sugar headaches suck.
I was out and about today helping my sister who’s 2 weeks from having her baby boy 🤗 so THANKFULLY, us up-staters have Wegmans. My options were pretty limited because of my plan for dinner, so I made a very basic salad at the salad bar with organic Italian dressing and 1/2 cup of whole wheat croutons.Boring. Not good. But did the trick for about an hour.

So, here I am at my sister’s house helping her make pre-baby freezer meals and guys- I had to SIT DOWN to rest. I was weak. And I was being dramatic but I was really hungry!
So I ate a banana, looking forward to dinner.
Dinner time YAYAYAYAY.
Sweet potatoes. Carbs. Oh yes please. To make:
Wash the sweet potato, rub off any dirt with a paper towel, poke the sweet potato with a fork all over, wrap it in a damp paper towel and microwave it for about 5 minutes or until soft. Cut it up and pan fry them in olive oil and sprinkle with a little salt 🤤 so good.
I made salmon and asparagus as well, but them sweet potatoes.. they were the heroes of this dinner!

Finally- as promised. Here’s my teaspoon of dark chocolate chips. I was wrong. Not 3… but 10 whole chocolate chips. It took me longer to measure them than to eat them
