I’m happy tonight. Today was a really great day. I’m starting to not put so much emphasis on food.
Day 2 I would’ve died for a donut. Or a sub. Or a slice of pizza. Or all three. Together. 🍩🥪🍕
Day 6 I would’ve died for my boyfriend’s mom’s Apple cake (it’s OUT OF THIS WORLD.. and I still want it.. bad example).
I would’ve died for some buttery popcorn at the movies the other night.
But tonight- I’m just happy, satisfied and proud. I’ll tell you why:
I woke up this morning to my amazing boyfriend, Matt asking if he could take me out for a coffee date to celebrate one week of this madness. I of course accepted, so I grabbed a quick banana and we went to a cute little coffee shop. I had my usual Americano and started my day with a smile. 😊
When we got home, I only had a little less than 2 hours to get some meal prepping (that I’ve been putting off for a couple nights) done. So, I baked up 3lbs of organic chicken with a mixture of spices.
I used some of that chicken for fajita bowls.
I put some in the fridge for salads for the week, and then I made some lunch with the remainder. Can you take a guess what I made?!?
Buffalo chicken, duh. 😉 on a mixed greens!
Then we went on our merry way to our regular Tuesday night gig.
Before I decided to do this challenge and blog, Matt and I would typically enjoy a glass or two of Cabernet while entertaining hotel diners. I haven’t done this since before Christmas, actually (WAY too much drinking during the holidays). So, tonight I decided I’d use my “treat” yellow containers on some wine.
I had a glass and a half and loved every sip 😇
Now, I KNOW I’m not the only one who becomes ravenous and ready to eat anything after having some wine.
This is why I had a proud moment tonight and am going to bed feeling accomplished (baby steps, yeah?).
I came home super hungry after only having that salad and a little banana all day.
I could’ve made anything. I could’ve eaten cheese while I was cooking (please tell me I’m not the only one who does that).
But I DIDN’T!
Having all my carbs gone for the day – lookin at you, vino – I knew I had to make something light, filling and carb free.
I whipped out my vegetable spiralizer that I’ve had for years and was still in the packaging.
Took a zucchini and made it into noodles!
After looking around at what I had in my cupboards and fridge, I threw some stuff together and came up with something that very well may become a staple. It wasn’t hard to make and it was a very inexpensive meal.
Here’s what I did… so you can make it too!
Zucchini noodles w/ garlic and no sugar added tomato sauce and 2 chicken sausage links.
⁃ 1 good sized zucchini, spiraled and patted dry with paper towel
⁃ 1 8oz can tomato sauce (Aldi)
⁃ 2 mild Italian chicken sausages (Aldi)
Cook the chicken sausage in 2 tsp olive oil. Set aside. Use remaining oil + 1 more tsp and sauté one clove of garlic in.
Add zucchini noodles in pan and cook about 3 minutes. Add tomato sauce with any spices you want (I added crushed red pepper, onion powder, salt, pepper and oregano). Finally, add cut up chicken sausages and let bubble.
Try this. I promise you’ll love it, too.

This is what it’s all about. Breaking bad habits and making healthy choices. If I take anything away from these 21 day, that’ll be it!
Now, time for bed. Haha I do not miss that about 🍷🍷 – that shit makes me tiiired!
