I can not believe I’m finished with day 9!
Had a fabulous night sleep (no heartburn in days!), woke up refreshed and ready to take on the day!
Started my day with a delicious and easy egg white scramble with a side of turkey sausage links.
This is two servings since I made some for Matt as well. 😊
I sautéed some chopped onion in 2 tsps of olive oil, then threw in two handfuls of baby spinach and cooked until wilted. Added liquid egg whites and voila!

I spent some time with my 16 month old niece today. She’s an absolute doll. And she is busy. Playing, screamin, trying to talk, and almost walking. I held her hand and walked around the island of my parents’ kitchen a few times – she was wobbling around, smiling, and grabbing onto my hand so tight. It was precious 😍.
I was so distracted playing with her that by the time I left my parents’ house, it was time to get home and start on dinner. I had planned a little “date night” for my boyfriend and I. 🤗
We’ve been together a little over 7 years (I know mom, I know!) and one of our favorite things to do when the weather’s nice is go to a local park and have a picnic.
Since it’s 17 degrees out with snow on the ground, that’s obviously not possible. ❄️ So, I decided to make a kind of kid-like dinner and make a picnic at home by our fireplace.
I chose to make some grown up chicken tenders with sweet potato “fries”. 😊
I cut 2 medium sized sweet potatoes into wedges, put them on a baking sheet and tossed them in olive oil, salt and pepper.
I put them in the oven at 400 degrees for 25 minutes, flipping them halfway.
(Yep, I got some crispy ones in there… I love those!)
In the meantime, I cut 2 good sized chicken breasts (about 12 oz each!) into strips and chopped up some fresh thyme.
I measured 1 cup of whole wheat Panko breadcrumbs on a plate and added in half the fresh thyme (about 1 1/2 tbsp), a little Parmesan, chili powder, onion powder, salt and pepper. Never underestimate salt and pepper!
On another plate, I put about 4 tbsp of Dijon mustard and the remainder of the thyme mixed together.
I dredged the chicken strips in the Dijon, then in the breadcrumbs, making sure every inch is covered!
I put them on a baking sheet, sprayed with cooking spray and put them in the oven for 20 minutes at 400 degrees.
While I was waiting for the “fries” and chicken to finish up, I made 2 amazing and HEALTHY dipping sauces.
The first one: Sriracha Chipotle “Aioli” These were the only ingredients I used (pepper, too). This was so spicy and amazing! Especially with the sweet potato wedges. Sweet and spicy! And tasted not healthy at all.
The other: Homemade Honey Mustard This one has a kick too, but has that sweetness you love about honey mustard. Minus all the additives and preservatives.
You can use agave instead of honey, as well.
Finally, the cozy at-home picnic.
I put down a soft blanket, lit some tea light candles, turned on Spotify’s “Your Favorite Coffeehouse” playlist and turned on the fireplace. The perfect atmosphere 😊
We “cheers”-d our seltzer waters and enjoyed a not so fancy dinner together. It was perfect. ♥️
And now for the completed meal! YUM! I did not miss anything fried. I didn’t miss the ketchup and even my boyfriend thought it tasted too good to be healthy. This, my friends, is an absolute keeper!
