Every. Single. Day. Without fail… I type “21 Day Dix” on accident.
Today was an uneventful day, but I guess that’s Saturdays.. either they’re full of stuff to do or nothing to do. Mine was the latter, and I didn’t mind it!
Matt and I woke up this morning craving coffee (as usual). If all my posts have something in common, it’s that coffee is always involved. It’s a slight obsession.
So I grabbed a banana and we went out to meet a few friends at Starbucks. We sat and talked for over an hour, it was nice!

After that, Matt and I went home, had lunch and watched a new show on Amazon Prime called “Electric Dreams”. Super odd- very Black Mirror-ish. It takes ya out of your own world for a minute.
I had one more fajita bowl left in the fridge from Tuesday’s meal prep, so I had that and spruced it up.

We ended up having a last minute gig tonight, so I’m super glad I had such a filling lunch. It kept me full until 10 when I got home!
I had tons of water and tea tonight while singing which always fills ya up too.
For dinner, I had about 2 servings left of ground beef in the fridge, so I knew I should use that up.
I kind of made a similar dinner to last night’s, except without pasta! I used spaghetti squash!
I always thought in order to make spaghetti squash, you had to roast it in the oven. That takes a good 30-40 minutes, and after coming home from work, who wants to wait that long?!
So, I tried a different technique. I poked the squash with a fork in a line exactly where I’d cut it in half, and popped it in the microwave for 5 minutes.
If you don’t do that step, it’ll be impossible to cut through. After 5 minutes, it’s soft enough to get a knife through and cut it in half.
I then took a pie Pyrex baking dish and filled it with about 1/2 inch water. I placed one half at a time in there (face down so the skin is facing up) and microwaved it for another 5 minutes. Perfection! It was like al dente spaghetti squash. Aka, not mushy!
While the squash was getting nice and soft, I sautéed some garlic in a tsp of olive oil, then added in the beef to heat it up! Then I finally added 16 oz. of tomato sauce to that.
Got it nice and bubbly and added in my usual spices – oregano, salt, pepper, crushed red pepper and onion powder. 😊
Then I took a fork and scraped out the “spaghetti”. Added all of that to the sauce and beef mixture and let it heat for about 3 minutes.
Dinner was served!
Not a very pretty looking plate, but it was freakin GOOD. I will absolutely, positively be making this again.

Therefore, I had ONE honey graham cracker. One. I wanted more but I didn’t. That was my final 💛 container for the day.
This diet makes you get creative, that’s for sure!
