Day 19 [21 Day Fix]

Ahhh Saturdays 😌

I got a lot done around the house today and now I’m going to bed feeling accomplished and happy!

Laundry’s done, sheets are washed, kitchen and bathrooms are clean… it’s a beautiful thing.

A lot of people like to break up their cleaning throughout the week- I love getting it all done in one day. It’s exhausting, but you wake up the next morning with a whole house clean, not just part of it.

So I spent a lot of my morning and afternoon doing that and watching Barefoot Contessa on Food Network.

I didn’t crave food until I watched an episode where her and Jeffery (they’re very cute) learned how to make pizza. And Ina made lemon cheesecake bars… what was I doing to myself?!

I went into the kitchen and made myself an easy lunch since I somehow forgot to eat breakfast!

3 scrambled eggs and 2 chicken breakfast sausages! For 2❀️.

Matt and I had plans to have one of my best friends from high school and her fiancΓ© over tonight. So, I planned on making up some healthy appetizers to snack on while we played games.

We stopped at Wegmans and grabbed everything we needed. As soon I got home, I got to cooking!

First up! Naan Flatbread Pizza I put 2 naan breads on a cookie sheet and sprayed them with cooking spray.

Put them in the oven at 350 degrees for 5 minutes, just to crisp them up a little.

Then I added pizza sauce, part skim shredding mozzarella and a few pepperonis. I put it back in the oven for about 7 more minutes.

They were perfect! Crispy crust and gooey cheese 😍

I sliced each naan into 4’s and counted 1 piece as 1πŸ’›.

Then I made Buffalo Chicken Egg Rolls I made my typical mixture of rotisserie chicken, crumbly blue cheese, Frank’s hot sauce and Greek yogurt.

I place a good spoon full of the mixture in an egg roll wrapper and rolled it up!

I sprayed them with cooking spray (next time I’ll do an egg wash to give it a golden shell) and put them in the oven for about 12-15 minutes at 350 degrees.

I served these with a blue cheese yogurt dressing. One roll for:

I also served celery and carrots, as well as a favorite that I couldn’t eat….

I didn’t have anything to drink except sparking water.

I loaded up on carrots and celery and had 3 little pieces of the naan pizza and 2 egg rolls. I was full! But not sick-full.

Our “wild” Saturday night consisted of an 80’s retro board game that’s actually one of the most fun games I’ve played. It’s called Personal Preference. All 80’s all day, baby.

Matt and I lost. It was sad.

But then I redeemed myself πŸ’ͺ in Nintendo64 Mario Party and Mario Kart.

I’m a 90’s baby… that’s where I’m victorious!

So, I had a bit more cheese than usual and maybe 1 more carb container than usual, but I also didn’t use any of my fruit containers today. It all evens out.

One thing’s for sure, if you want to be social and be on this diet, you have to give a little. Unless you want to be the weirdo with colored containers in your purse measuring your food.

It was a really fun night. There was a lot of great conversation and many laughs. 😊
