I think I need to re-introduce myself.

What. The. Hell.
I do not like Weight Watchers.
There IS such a thing as too much freedom. Can I go back to the 21 Day Fix now? Because that seemed to be what worked for me.
Yeah, I can eat whatever I want on this diet (in portions), but should I eat anything I want? No! Not me specifically, anyway, because I feel like ass. Actual ass.
I started my day out great, knowing I’d be having all of my points tonight for the super bowl.
We went over to Matt’s parents’ house late this morning for some coffee and Matt’s dad made me some delicious egg whites. Fluffy and protein packed! And zero points.
I also had a banana and one clementine for zero points as well.
We had plans to watch the super bowl with my parents at their house, so my mom made a few things and so did I. We decided we’d make a healthy but “super bowl-y” menu.
So I made Jalapeño Popper Egg Rolls.
These are amazing. And only 4 points for 1!
They don’t look amazing, but you’ll want to eat the whole plate of ’em, trust me.
- 1 15 oz can black beans, drained & rinsed
- 4 jalapeños, cored and diced
- 4 oz cream cheese (lite or Greek yogurt blend)
- 1/2 cup shredded cheddar cheese
- 10 egg roll wrappers
- 1 egg
- Greek yogurt
- Salt & pepper
Preheat oven to 350 F. Combine the black beans, jalapeños, cream cheese and shredded cheese.
Place a couple of tablespoons of the mixture into an egg roll wrapper, and wrap those puppies up! Put them on a cookie sheet (spray with cooking spray first).
Beat 1 egg and brush egg wash onto the egg rolls. This gives them a nice crispness and color.
Bake for 12-15 minutes.
*For the dipping sauce*
Put about 3/4 cup of Greek yogurt in a bowl. Add sriracha, salt and pepper to taste. It should be a light pink color and have a kick!
Serve & Enjoy for 4 points each!
My mom put out veggies and pretzels. She also made some delicious baked chicken tenders. Yum! I had a couple of those (chicken’s zero points, baby!).
I had 2 Singha Beers for 7 points and I finished off my night with an amazing “healthy” cheesecake parfait. Holy MOLY this is the best thing ever.
Doesn’t this just look unbelievably good?
It’s literally Greek yogurt, light cream cheese, stevia, Meyer lemon juice, graham cracker crumbs, and toasted coconut. That’s it! Easy and tastes better than cheesecake to me. Way to go, mamacita!
We had fun! The actual game was good, but the food and company was better. All that was missing was my sister, brother in law and my adorable niece and nephew, but they’re still getting acclimated at home. 😊
My sister brought up a good suggestion. Starting after this diet, I’m going to give myself a day or 2 to meal prep and plan like I did for 21 Day Fix. I didn’t give myself that time with Weight Watchers. So, in order to do this right and be informative and helpful to all of you (and myself!), I’m going to meal plan tomorrow and not just fly by the seat of my pants.
