Girl Scout Cookies Came – Day 4 [WHOLE30]

And it was sad.

They’re still sitting in our foyer in the little grocery bag the Girl Scout left them in.

See ya in April, cookies! šŸŖšŸŖ

Today was a great day. Sunday’s are my favorite.

It’s the perfect day to clean, do laundry, cook a nice meal and just relax. And that’s exactly what we did šŸ˜Š

I started my day with my new favorite Larabar (Breakfast 12pm):

I dragged Matt to Wegmans & Aldi with me šŸ™ƒ

Got a ton of produce from Aldi and all of my organic meat & other little things from Wegmans.

When we got home, we cleaned the house and by the time we were finished, we were both pretty hungry.

Lunch (3:30pm): Scrambled eggs with spinach and crispy prosciutto!

I put the prosciutto on a cookie sheet lined with foil and baked it for about 10 minutes at 400 degrees. It was perfect!

Meanwhile, I put a pork tenderloin in the crockpot with some chicken bone broth, tomato paste, salt, pepper, and hot sauce. I put that puppy on low for about 4 and a half hours (my pork tenderloin was 1.6 lbs).

I have a weird love for Italian mob movies ever since seeing Good Fellas, so Matt showed me Casino. It’s a 3 hour movie, so we started that while waiting for dinner to be ready.

With about an hour left on the crockpot, I prepared 2 baked potatoes by washing them, coating them in olive oil and sprinkling them with salt.

Popped them in the oven at 425 degrees for an hour.

Not the prettiest looking dinner, but a damn good one!

I cut the potatoes in half, put about a Tbsp of ghee (which is clarified butter) and put a heaping serving of pulled pork on top.

The skin of the potato was crispy and salty šŸ¤¤ yum.

We had a side of asparagus as well.

Guys, it’s day 4 and I’m feeling great. My energy is amazing (even without coffee), my heartburn has significantly decreased (even with coffee) and I just feel refreshed.

A little hungry, but nothing like that 21 day fix hunger.

I will say though… only because I looked it up (I’m also weird), but I assumed other people will wonder the same.

Your poop is going to be weird.

You’re going to be concerned.

And you’re going to look it up.

And hopefully you’ll find this- I’ve already looked it up and apparently it’s pretty normal. Matt and I are both experiencing it.

So hang in there, pooper! šŸ’©

Thanks for reading ā™„ļø I hope ya’ll enjoy your Girl Scout cookies. Let me know how they are šŸ™Œ
