Homemade Larabars! Days 18-20 [WHOLE30]

Yes I did and they’re amazing!

I’ve really grown to love Larabars, but holy shit they’re expensive! I’ve been lucky they’ve been on sale at Target lately for 4.99 a box. A box has 5 bars in it.

It really adds up and gets expensive.

So I did some digging on Pinterest and found a few different recipes for Larabars, so I just combined a few and made my own!

Key Lime “Lyssa”bar. Get it? My names Alyssa? 🤓

I think they taste even better because you can control how much flavoring you put in them (example: lime juice! The more the better)!

Here’s the recipe:

  • 1 cup pitted medjool dates
  • 1/2 cup raw unsalted almonds
  • 1/2 cup raw unsalted cashews
  • 1 cup unsweetened shredded coconut
  • Zest and juice of 2 limes

Put everything into the food processor (keep some lime juice on reserve to add later)

Pulse until it all starts coming together, adding lime juice as you go.

Once well incorporated, put the mixture into a 8×8 pan with parchment paper.

Pat down the mixture evenly, then let set in fridge for about an hour.

Cut into 12 even bars 😋

Wrap them in Saran Wrap and store in the fridge. They’re extra good cold!

Matt and I just finished up day 20.

I feel amazing. I have energy, I feel alert, I’m not bloated, and I’m generally happy! I don’t miss the foods I was eating before at all which is almost a little concerning.

I am someone who can eat a whole block of cheese in one sitting… and be proud! 🧀

Someone who dreams about pizza. 🍕

The only think I miss is the occasional glass of wine, which is shocking.

The absolute only negative I’ve experienced so far is that my stomach’s been a little off lately and I’m not sure what’s bothering me.

At the end of the night (after dinner) for the past 3 nights, I get a sudden urge to go to the bathroom, then have a really unpleasant experience.

Not sure what’s goin on. It may be something I’m eating, it may just be a little bug… I don’t know! But I hope it goes away soon.

Day 20 and no slip ups. I’m proud.

I’m also a little nervous for day 30 to roll around.

I’m nervous to go back to my old eating habits. Which, I guess I don’t need to!

Day by day, right?
